LEMON TAHINI ROLLS
Finely sliced marinaded courgette,stuffed with a lemon tahini cheese blended with spring onions and coriander to create a sharp but satisfying taste. Tahini comes from sesame seeds and is extremely high in calcium, providing a good alternative for those who don't eat dairy products .
SHIITAKE MUSHROOM TARTLETS
The base of these canapes is made from shiitake and portobello mushrooms with miso and soaked pumkin seeds. They are then dehydrated to create a lovely smokey flavour and topped with a light creamy hoummous and olive caviare .
RAW STUFFED PURPLE CHICORY
These canapes are filled with finely chopped vegetables bound together with a tomato based pesto , decorated with fine sticks of julienne vegetables and finally drizzled with a mango dressing. The contrasting bitterness of the chicory and sweetness of the mango create a lovely combination.
CAROB, CHOCOLATE AND RASBERRY GANACHE CAKE
Carob cuts down the caffeine and has a rich malty flavour. The chocolate cream topping is made of avocado but the taste is disguised by raw cacao. Together with the raspberries it has a sharp, tart flavour. This cake is also made into miniature versions for canapes.
RAW CHOCOLATE SLABS
This chocolate is great served as big slabs so everyone can break off pieces and enjoy or can be made into round discs. Alternatively can be served with ice cream and topped with your favourite nuts and goji berries for that extra super food antioxidant.
